Classic, Almost Healthy Potato Salad

I have a super tasty, somewhat healthy recipe for you guys today! Honestly, the only "un-healthy" ingredient is mayonnaise, & I've cut it down from 1.5 c to 1 c. Who wants a potato salad swimming in mayo, anyway?! I'd rather taste all the fabulous other ingredients!

Here ya go:

6 med-large potatoes, boiled (potatoes should be similar in size so they all boil at the same rate)

1 c mayo

2 tbsp apple cider vinegar

1.5 tbsp sugar

1 tbsp yellow mustard

salt, garlic powder, & pepper to taste (I never measure spices, sorry! haha)

2 celery ribs, diced

1/2 c onion, diced or minced

5 hardboiled eggs, sliced or diced



Chop potatoes up & mix with celery, onion & eggs. Mix mayo, cider vinegar, mustard, sugar, & spices together. Add to potato mixture & sprinkle paprika over everything if you choose. Voila! Enjoy!
